IQF Blackcurrants prepared from fresh clean, sound currants by cleaning, processing and freezing in accordance with good commercial practice. The nominal size of the currants should be 12mm diameter. Frozen free flowing currants should possess a clean, delicate natural favour of the blackcurrant with no off flavours present. The blackcurrants should exhibit a consistent ripe dark purple/ black colour with little variation. The texture of the currants should be good, all being firm but succulent. Stalks should be absent in a given sample. The process should ensure stability of colour and flavour and product temperature shall be lower than 180C. The samples should always be examined and the grades ascertained by trained personnel experienced in quality control procedures.
