The IQF Plum halves are prepared from fresh, clean, sound plums; processed and quick frozen in accordance with good commercial practice. The plums are washed, cut into 1/2, de-stoned, washed and IQF frozen to -18oC. This product is not blanched. Frozen free flowing plum halves should possess a clean, delicate natural flavour of plums without off flavours. The skins should exhibit a consistent dark purple ripe colour with little variation. The texture should be good with all plum halves uniformly firm but tender.
